jook or congee

what you need:
1/2 cup of rice
2-4 cups chicken/veg stock
2 tbsp soy sauce
1 tbsp oyster sauce
1 garlic minced
a few (3-5) pieces of shitake mushrooms cut into bite sized pieces

2 tbsp chopped green onions
1 tbsp fried shallots
1 tsp sesame oil
black or white pepper
1. wash your rice and add all top 6 ingredients in a pot and stir
2. let boil and then turn down your heat and let simmer
3. leave simmering for about 30 minutes (check every 10 minutes or so and add more water or stock, stirring every so often)
4. top with remaining ingredients ( i love tons of pepper and chili powder as well)
i was craving this all night and finally decided to just make some at 11 pm. i’m not trying to eat so late but i just couldn’t help myself tonight. it is like chicken soup to most asians but easier to make. my mom always cooked me up a batch whenever i was sick and it always hit the spot. my craving was definitely satisfied, yum!
